Known as the first Culinary School in the Philippines, and for the past 16 years, Center for Culinary Arts have been producing top filipino chefs who are making names here and abroad.
Last June, I attended their launch of The Coffee Academy. And yesterday, I had the opportunity to be part again of another additions to this world of culinary education. Aside from launching the Coffee Academy to the public, the Culinary Research Studio and the Grand Kitchen were launched!

COFFEE ACADEMY:
The Coffee Academy of the Center for Culinary Arts, Manila in partnership with the Coffee Academy of the William Angliss Institute, Melbourne, Australia is the first in the Philippines who offers 5 programs for people who are coffee enthusiasts or people who wants to broaden their knowledge, not just in cooking or baking, but also in coffee making.
ABC of Espresso Making
The basics are the best! Here you will have an introduction to espresso coffee that will give you basic knowledge and skills that will help you in the process of coffee making.
Some of the fun learnings that you will gain here is how to make an espresso from the scratch, how to steam you velvety and sweet milk, practice in making your own first personalized cup of hot latte and other espresso drinks, and how to construct your creative espresso coffee menu. Part of this course is you will also learn how to operate and clean espresso machines and grinders in a safe way.
Advanced Espresso
Now that you have learned the basic skills in espresso making, it is much better if you continue this journey in making a great cup of coffee. ABC of Espresso as a pre-requisite, Advance Espresso is the next step.
The course tackles about the advance skills in coffee making as well as broaden your knowledge more, including:
- factors that effect the extraction rate of espresso
- setting and adjusting the grinder
- advanced milk texturing
- advanced coffee menu and order processing
- the coffee industry, including coffee cultivation and processing, roasting and blending, and
- taste and analysis of a range of single origin coffees (Source: The Coffee Academy Brochure)
Practice Sessions
This is a good way for students who does not have espresso machines to practice to but wants to hone their skills in making a great coffee. This is arranged with the Coffee Academy office and depends on the availability of the trainer.
Booking and paying for the practice sessions are done by contacting their office.
Prepare and Serve Espresso Coffee: Nationally Recognized Certification Program
This program is were you can earn a Nationally Recognized Certification from the William Angliss Institute, Australia. In this program, you can put into practice what you have learned from the past courses (ABC of Espresso Making, Advanced Espresso and Practice Sessions).
You will actually do a hands-on training experience here! In a real coffee shop of course!
This program is the nationally endorsed unit of competency and is delivered in up to 5-stages. Coffee makers with experience on espresso machine may be eligible for credit through the recognition and evaluation process.

- ABC of Espresso Making
- Advanced Espresso
- Practice Sessions
- Theory, Assignment and Work Experience (In this case, you must study on your own about the different theories in espresso making in your own time and schedule. The work experience will be arranged for you)
- Students must have at least 12 hours OJT experience and keep a detailed log book about it.
- Final Assessment
